Celebrating Big with Berry Punch

Cranberry Raspberry Vanilla Punch

Servings: 6-12

  • 8          cups cranberry-raspberry juice
  • 8 1/2    cups cranberry ginger ale
  • 1          tablespoon vanilla extract
  • 1          pint raspberry sorbet
  • frozen cranberries, for garnish
  1. In large punch bowl, add juice, ginger ale and vanilla extract. Stir until combined.
  2. Add frozen cranberries and scoops of frozen sorbet.
  3. Stir slightly then serve immediately.

Pigskin Potatoes

Prep time: 20 minutes
Cook time: 44 minutes
Servings: 8

  • 1 bag (1 1/2 pounds) Dynamic Duo or Terrific Trio Little Potatoes
  • 6 ounces plain cream cheese at room temperature
  • 1/3 cup finely shredded orange cheddar cheese
  • 3 tablespoons finely chopped fresh chives
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 jalapeno, finely diced (optional)
  • 1 pound thinly sliced bacon, rashers cut in half
  1. Heat oven to 400 F.
  2. Boil potatoes until fork tender, approximately 15-20 minutes. Cut in half and allow to cool.
    In bowl, use spatula to combine cream cheese, cheddar, chives, salt, pepper and jalapeno, if desired.
  3. Once chilled, spread cream cheese on half of cut potatoes and sandwich each with other halves. Wrap each potato using half rasher of bacon around cut middle to ensure cheese doesn't escape.
  4. Bake on middle rack 10 minutes. Flip and bake 10 minutes.
  5. Turn oven to broil. Broil 2 minutes, turn once and broil 2 minutes until bacon reaches desired crispiness.

Tip: Boil potatoes 2 days ahead. Fill and wrap potatoes 1 day ahead then bake and serve on game day.

A Sweet-Heat Snack

Finger foods and watch parties go hand-in-hand, which is why these baby back ribs are ideal for grabbing a couple (or more) and heading to your favorite spot on the couch. Glazed with a mixture of honey, chipotle peppers and mangoes for some sweet heat, they're cooked low and slow for fall-off-the-bone flavor.

Just wrap the ribs and sauce in aluminum foil, place over low indirect heat and let your grill do the work. To help simplify game day, try cooking a day in advance and warm in the oven a couple hours prior to kickoff.

Baby Back Ribs with Honey, Chipotle and Mango Glaze

Servings: 8

  • 2 racks baby back ribs
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 1 can chipotle peppers in adobo sauce
  • 4 ripe mangoes, cubed
  • 1 cup honey
  1. Remove ribs from package; rinse and pat dry. Remove membrane. Place in shallow pan, sprinkle with salt and pepper and set aside.
  2. In small saucepan over medium heat, cook chipotle peppers, mangoes and honey, stirring constantly, until cooked down and thick enough to coat back of spoon.
  3. Heat grill to 225-240 F.
  4. Wrap ribs and 2/3 of sauce mixture tightly in aluminum foil and place over indirect heat. Close lid. After 2 hours, flip ribs and cook 2 hours. Open aluminum and remove ribs, place directly on grill and brush with remaining sauce. Cook 30 minutes. Remove from grill and serve hot.

Jollof Rice

Prep time: 15 minutes
Cook time: 30 minutes
Servings: 5-7

  • 2          tablespoons extra-virgin olive oil
  • 1          cup diced onions
  • 2          tablespoons minced garlic
  • 1          teaspoon minced ginger
  • 1/2-1    habanero pepper, thinly sliced
  • 1          cup uncooked basmati rice
  • 1 1/2    cups chicken stock
  • 1          can (15 ounces) crushed tomatoes
  • 1          teaspoon seasoned salt
  • 1/2       teaspoon smoked paprika
  • 1/2       teaspoon curry powder
  • 1/2       teaspoon dried thyme
  • 1          fresh bay leaf
  • chopped parsley or bay leaf, for garnish
  1. In large pot over medium heat, heat olive oil. Add onions and saute until tender, cooking approximately 5 minutes. Add minced garlic, ginger and pepper; cook about 30 seconds, making sure not to burn garlic.
  2. Pour in rice and stir to combine. Allow rice to toast in pot 2-3 minutes. 
  3. Add chicken stock, crushed tomatoes, seasoned salt, smoked paprika, curry powder, thyme and bay leaf; stir together then bring to boil. 
  4. Once mixture begins to boil, reduce heat to low and cover pot with lid. Continue cooking rice about 25-30 minutes, or until all liquids evaporate and rice becomes more tender. Remove bay leaf.
  5. Turn off heat and allow rice to rest 10 minutes with lid on. Once rice is completely tender, make sure all ingredients are mixed together. Top with parsley or bay leaf and serve.

Divide blueberries, mint, sugar and lime juice into two tall glasses. Muddle until blueberries are smashed. Fill the glasses with ice and add the rum. Stir slightly. Top with Prosecco and garnish with blueberries and a mint sprig.

This cocktail is a fresh spin on the famous Moscow Mule, which, legend has it, was created in New York in the 1940s.
  • 1 Lime
  • 4 Oz. Vodka
  • 1 Oz. Ginger Liqueur
  • Prosecco (enough to fill glass just below the rim)
  • Ice

In two chilled copper mugs, squeeze the lime over ice. Add the vodka, the ginger liqueur and finish with Prosecco. Garnish with a slice of lime.

La Vita Margarita

Take the classic to the next level with refreshing Italian bubbles!
  • 3 Oz. Tequila
  • 2 Oz. Lime Juice
  • 2 Tablespoons Agave Nectar
  • Salt (optional)
  • Prosecco (enough to fill glass just below the rim)

Shake the first three ingredients with ice. Strain into two glasses rimmed with salt if you desire. Top with Prosecco and garnish with a lime wedge.

1. Cluster the conversation spots

When planning your backyard layout, think beyond the patio table, and provide more than enough seating for all. Arrange sofas and chairs into conversation clusters to keep people outside and enjoying each other’s company. It’s also smart to provide coffee tables, side tables and other spaces where people can set their drinks and snacks. Don’t be afraid to borrow pieces from a friend or neighbor to make the party set complete.

2. Add the right lighting

Consider the time of day of your gathering and what that means for your lighting. Intense late-day sun glare is unpleasant for all, but a few strategically placed patio plants can make a dramatic difference (and make the space feel more intimate). For the post-sundown festivities, light up the party zone with holiday lights along deck rails or zig-zagged overhead. Add a fire pit, and, if it’s chilly, an extra stash of throw blankets and jackets and you’ll have a cozy, well-lit space for those late-night talks.

3. Keep flying invaders at bay

No one likes it when uninvited guests like flying, biting insects show up. Bottles of insect repellent in a conspicuous place are a good bet on buggy nights, but keep these (and the spraying area) well away from the food. 5. Keep the snacks simple and stress free
The secret to a good party is not stressing over every detail of the décor and the same goes for the food. An array of delicious but simple snacks are more than enough to get the party started. Soft pretzels are always a party favorite, but did you know that most people — 69 percent of them, to be exact — prefer to eat their soft pretzels dipped? Another 28 percent prefer cheese toppings. For the perfect snack to spice up the festivities, include a batch of Superpretzel Parmesan Garlic Bites or Superpretzel Everything Pretzel Bites (see recipes below).

Parmesan Garlic Bites

Ingredients:
  • 9-12 Superpretzel Soft Pretzel Bites
  • 1/2 cup of extra virgin olive oil
  • 2 tablespoons wet, minced garlic
  • 2 tablespoons dry parsley
  • 2 tablespoons pretzel salt
  • 1/4 cup of Parmesan cheese

Directions:
  • In a bowl, combine the extra virgin olive oil, garlic, pretzel salt, parsley and cheese and set aside.
  • Deep fry the pretzel bites in your favorite cooking oil at 360 degrees F for about 2 minutes.
  • When done, dredge the pretzel bites into the oil and cheese mixture.
  • Serve with your favorite dipping sauce.

Everything Pretzel Bites

Ingredients:
  • 20 Superpretzel Soft Pretzel Bites

Directions:
  • Prepare soft pretzel bites according to instructions on the box.
  • Lightly coat soft pretzel bites with melted butter.
  • Season soft pretzel bites with everything bagel seasoning and soft pretzel salt.
  • Bake in 350 degree F oven until golden brown.
  • Serve with whipped cream cheese.

Add Spice to Summer Entertaining

When the sun is shining, it’s time to fire up the grill, which means you can get creative and show off your skills. Parrillada Mixta with Garlic and Sweet Chipotle Marinades

Servings: 6-8

Garlic Chipotle Marinade:

  • 14        garlic cloves, peeled
  • 1          medium white onion, quartered
  • 1 1/2    cups light Mexican beer
  • 3/4       cup olive oil
  • 1          tablespoon coarse black pepper
  • 4          tablespoons Tabasco Chipotle Pepper Sauce 
  • 1          teaspoon salt 
  • 2          flank steaks (1 pound each)

Sweet Chipotle Marinade:

  • 8          garlic cloves, peeled
  • 1          red bell pepper, de-seeded and stemmed 
  • 1          small white onion
  • 1          teaspoon ground cinnamon
  • 1          teaspoon smoked paprika
  • 8          tablespoons olive oil
  • 8          tablespoons agave syrup
  • 4          tablespoons fresh lime juice
  • 1 1/4    cups orange juice
  • 1 1/4    cups cold water
  • 4          tablespoons Tabasco Chipotle Pepper Sauce 
  • salt, to taste 
  • 2          pounds extra-large shrimp, peeled, deveined and tails on
  • 4-6       boneless, skinless chicken breasts
  1. To make Garlic Chipotle Marinade: In blender, puree garlic, onion, beer, olive oil and pepper. Transfer puree to large mixing bowl; add chipotle sauce and salt.
  2. Place steaks in re-sealable plastic bag and pour in marinade.

Note: Marinating time depends on the cut of beef selected. For fajitas or skirt steak, marinate at least 6 hours. 

  1. To make Sweet Chipotle Marinade: In blender, puree garlic, bell pepper, onion, cinnamon, paprika, olive oil, agave, lime juice, orange juice, water and chipotle pepper sauce.
  2. In separate re-sealable plastic bags, divide marinade over chicken and shrimp. Allow shrimp to marinate 8 hours and chicken 24 hours.
  3. To prepare meat: Remove steak, shrimp and chicken from marinade and set aside. Heat grill to medium-high heat. Brush off excess marinade and grill chicken first, to desired doneness, then steak and shrimp.

Note: Cooking times will vary depending on cuts of meat and desired doneness. For best results, use a meat thermometer.

Serving suggestion: Place steak, shrimp and chicken on large platter and serve with side items such as fresh guacamole, pico de gallo, grilled onions, fresh limes and fresh corn tortillas.

Slow-Cooked Maple Ham

Prep time: 5 minutes
Cook time: 5 hours, 15 minutes
Servings: 10

  • 20        ounces Sweet Harvest Pineapple Chunks
  • 8          pounds Appleton Farms Smoked Ham Butt
  • 1          cup Specially Selected 100% Pure Maple Syrup
  • 1          cup Baker’s Corner Brown Sugar
  • 1/2       teaspoon Stonemill Cinnamon
  • 1          tablespoon Burman’s Dijon Mustard
  • 1          teaspoon Stonemill Ground Black Pepper
  1. Pour pineapple into large slow cooker. Place ham on top of pineapple, flat-side down.
  2. In small bowl, combine syrup, brown sugar, cinnamon, Dijon mustard and pepper. Pour over ham.
  3. Set slow cooker to low. Cook 4-5 hours.
  4. Remove ham; keep warm. Skim fat off top of remaining liquid in slow cooker.
  5. Pour liquid into small saucepan and bring to boil. Reduce heat to simmer; cook until reduced to desired consistency.
  6. Serve sauce on side or heat oven to broil and glaze ham. Broil 3-4 minutes for caramelized crust.

Holiday Ham Sliders

Cook time: 25 minutes
Servings: 6

  • Carlini Canola Cooking Spray
  • 3          ounces Happy Farms Preferred Cranberry White Cheddar, shredded
  • 3          ounces Happy Farms Preferred Plain Havarti Cheese, shredded
  • 12        ounces L'oven Fresh Hawaiian Sweet Rolls
  • 2          tablespoons Burman's Spicy Mustard
  • 1/4       cup sliced red onion
  • 12        ounces Appleton Farms Spiral Sliced Half Ham
  • 1/4       cup sliced green apple
  • 4          tablespoons Countryside Creamery butter, melted
  • 1/2       teaspoon Stonemill Garlic Powder
  • 1/4       teaspoon ground Stonemill Sea Salt
  • 1/2       teaspoon Stonemill Parsley Flakes
  1. Heat oven to 350 F.
  2. Line 9-by-13-inch baking pan with aluminum foil and coat with cooking spray.
  3. In small bowl, combine cranberry white cheddar and havarti cheeses. Reserve.
  4. Remove entire package of rolls and, keeping rolls connected, slice in half horizontally.
  5. Place bottom half of rolls in baking pan. Spread with spicy mustard.
  6. Top with red onion, ham, apple, cheese mixture and bun tops.
  7. In small bowl, combine butter, garlic powder, salt and parsley flakes. Pour over sandwiches.
  8. Cover with foil and bake 15 minutes.
  9. Remove foil. Bake 10 minutes more.
  10. Remove from pan and separate sandwiches; serve immediately.
