Cherry Lavender Spritzer

Servings: 6

  • 4          cups pitted and halved Northwest sweet cherries
  • 2          cups water
  • 3          tablespoons lavender
  • 2          tablespoons sugar
  • 6          Northwest sweet cherries with stems
  • 6          sprigs lavender blossoms
  1. In small saucepan, combine cherries, water, lavender and sugar. Heat mixture until it begins to boil. Remove from heat and allow mixture to cool completely. Strain and reserve liquid. 
  2. For each drink, combine 4 ounces cherry-lavender mixture and 4 ounces crushed ice in tall 12-ounce cocktail glass; top each with club soda. Garnish each drink with one cherry with stem and one sprig lavender blossoms.

Variation: To make alcoholic version, shake or stir strained cherry-lavender mixture and ice with 9 ounces vodka. Strain into 8-ounce martini glasses, top each with club soda and garnish each with one cherry with stem and one sprig lavender blossoms.

Roasted Cherry Sauce

Makes: 1 cup

  • 2          cups pitted Northwest sweet cherries
  • 2/3       cup sugar
  • 2          teaspoons cornstarch
  • 1/8       teaspoon salt
  • 1/8       teaspoon black pepper
  1. Heat oven to 400° F. On foil-lined baking sheet, combine cherries, sugar, cornstarch, salt and black pepper; toss to mix.
  2. Place in oven and roast until cherries start to release juices and become soft, about 10 minutes. Cool before serving.

Great taste aside, sweet cherries are a healthful addition to summer picnics, parties and barbecues thanks to their fiber, antioxidants and anti-inflammatory power. A Sweet Cherry Season

Orchards in the Pacific Northwest, the nation’s largest growing region, experienced a long, cool spring, which often translates into more time and energy a tree can put into the fruit. When combined with the superior growing conditions characteristic to the area, this season’s fruit showcases what Northwest cherries are known for: their large size and sweet flavor profile. 

Popular varieties grown in the Northwest include the mahogany-red Bings and super-sweet, yellow Rainiers. Rainier cherries, with their unique golden color and red blush, tend to ripen earlier in the year. Growers pick Rainier cherries over multiple weeks, selecting the ripest fruit each time.

Other varieties include the early-ripening Chelans and Tietons, followed by the often larger and darker Skeenas, Sweethearts and Lapins. Aside from the light-hued Rainier (which has juice that doesn’t stain) you can typically spot sweet cherries by their dark red skins – in general, the darker, the sweeter.

Great taste aside, sweet cherries are a healthful addition to summer picnics, parties and barbecues thanks to their fiber, antioxidants and anti-inflammatory power. They make for a snack that both grownups and little ones can enjoy straight out of the bowl thanks to their stem “handle” and can perk up appetizers, salads, desserts, sweet or savory sauces and more.

Outside of summer get-togethers, cherries make for a better-for-you late-night snack option as well. A cup of fresh, sweet cherries contains only 90 calories along with a low glycemic index of 22 making their cold, sweet crunch a tasty way to satisfy hunger cravings. Plus, they boast melatonin, which helps regulate circadian rhythm and promote healthy sleep patterns.  

Fresh cherries should be kept in a sealed bag or container, and keep for approximately two weeks when refrigerated. To extend the cherry season and enjoy their health benefits after summer fades, buy an extra bag or two and preserve cherries by rinsing, packing and freezing them.

Basic freezing instructions

  1. Select 3-5 pounds of firm, ripe, Northwest-grown sweet cherries.
  2. After rinsing and draining, spread whole cherries with stems in a layer on a baking sheet.
  3. Place in freezer until firm then pack into freezer-proof containers or plastic freezer bags. Remove excess air and cover tightly.
  4. Add frozen cherries to smoothies or juices, or defrost and put in hot cereal, pies, turnovers, cobblers and more. Or enjoy as a frozen, sweet late-night treat.

Cherry Bruschetta

Serves: 8

  • 18        slices (1/2-inch thick) small baguette-style bread
  • 1          tablespoon olive oil, divided
  • 1 1/2    cups pitted Northwest fresh sweet cherries, coarsely chopped
  • 1/4       cup chopped cilantro
  • 1/4       cup diced yellow sweet pepper
  • 2          tablespoons finely chopped green onions
  • 2          tablespoons lime juice
  • 1          teaspoon grated lime peel
  • 1/2       teaspoon garlic salt
  • 1/4       teaspoon ground black pepper
  • 2          ounces fresh mozzarella cheese
  • 1          tablespoon thinly sliced fresh basil
  1. Heat oven to 350° F.
  2. Arrange baguette slices on cookie sheet and toast one side 5 minutes. Turn slices, brush with 1/2 tablespoon olive oil and bake 5 minutes longer. 
  3. Combine cherries, cilantro, sweet pepper, green onions, lime juice, lime peel, garlic salt, pepper and remaining olive oil; mix well.
  4. Top each baguette with thin slice of cheese, 1 tablespoon cherry mixture and sprinkle of sliced basil. Serve warm or cold.

Granola:

  • 1/4       cup olive oil
  • 1/2       cup maple syrup
  • 1          teaspoon vanilla extract
  • 3          cups old-fashioned rolled oats
  • 3/4       teaspoon kosher salt
  • 1/2       teaspoon cinnamon
  • 1          cup sliced almonds
  • 1          cup dried Montmorency tart cherries
  • 1/2       cup pepitas

Smoothie Bowl:

  • 2 1/2    cups frozen Montmorency tart cherries
  • 2          tablespoons fresh lemon juice (1 lemon)
  • 1 1/2    tablespoons maple syrup
  • 1          ripe banana
  • 1          cup almond milk, plus additional (optional)
  1. Heat oven to 325° F.
  2. In small bowl, whisk together olive oil, maple syrup and vanilla.
  3. In separate bowl, stir together oats, salt, cinnamon and almonds. Pour in mixture. Bake about 45 minutes until golden brown, stirring every 15 minutes and watching carefully near end of baking, stirring more, if necessary.
  4. Roughly chop dried cherries.
  5. When granola is baked, cool slightly then stir in cherries and pepitas.

Note: Granola can be stored in air-tight container up to 1 month.

To make smoothie bowl: Blend together tart cherries, lemon juice, maple syrup, banana and almond milk. If necessary, add additional milk for a smoother consistency.

Serve smoothie in bowl with 1/4 cup tart cherry granola.

  • Nonstick cooking spray
  • 30        vanilla cream-filled cookies
  • 1/4       cup butter, melted
  • 3          packages (8 ounces each) cream cheese, softened
  • 3/4       cup sugar
  • 3/4       cup sour cream
  • 1/3       cup key lime juice
  • 1          tablespoon key lime zest
  • 1/4       cup flour
  • 3          eggs
  • green gel food coloring (optional)
  • 1          can (21 ounces) Lucky Leaf Blueberry Pie Filling, divided
  • 1          container (8 ounces) whipped topping, thawed
  • key lime slices (optional)
  1. Place baking sheet on bottom rack of oven. Fill halfway with water. Heat oven to 325° F. Line 9-by-13-inch pan with foil and spray with nonstick spray.
  2. Using food processor, pulse cookies until crumbly. Stir together crumbs and butter. Press evenly into bottom of prepared pan.
  3. Beat cream cheese until creamy. Add sugar and sour cream, and beat again until smooth. Add key lime juice, zest and flour, and beat until mixed thoroughly. Add eggs, one at a time, and beat gently after each. Add green food coloring to cheesecake mixture, if desired.
  4. Spread cheesecake batter evenly over crust in pan. Add 1 cup of blueberry pie filling over top of cheesecake. Use butter knife to gently swirl pie filling into cheesecake. Do not let knife go through to crust.
  5. Place pan on oven rack above tray of water. Bake 45-48 minutes. Remove immediately and place on wire rack for 1 hour then place in refrigerator until completely chilled.
  6. Cut into 24 squares and serve with whipped topping, remaining pie filling and key lime wedges.

Cherry Cheesecake Lush Dessert

  • 1          cup vanilla wafer crumbs
  • 1          cup finely chopped pecans
  • 1          cup butter, melted
  • 8          ounces cream cheese, softened
  • 1          cup powdered sugar
  • 16        ounces whipped topping, divided
  • 2          small boxes cheesecake-flavored pudding
  • 3          cups milk
  • 1          can (21 ounces) Lucky Leaf Cherry Pie Filling
  • 1/2       cup. chopped pecans
  1. Heat oven to 350° F.
  2. In medium mixing bowl, combine vanilla wafer crumbs, finely chopped pecans and butter.
  3. Press into 9-by-13-inch baking pan; bake 15 minutes. Remove from oven and cool.
  4. In separate mixing bowl, combine cream cheese, powdered sugar and 1 1/2 cups whipped topping. Mix until smooth; spread evenly over cooled crust.
  5. Combine cheesecake pudding mix, milk and 1 1/2 cups whipped topping, and mix until smooth. Spread evenly over cream cheese layer in pan.
  6. Top with pie filling, remaining whipped topping and chopped pecans.

S’mores Ice Cream Birthday Pie
Prep time: 20 minutes, plus 8 hours 40 minutes freezing time
Cook time: 2 minutes
Serves: 12

  • Nonstick cooking spray
  • 8          ounces milk chocolate, coarsely chopped, divided
  • 2 1/4    teaspoons canola oil
  • 30        chocolate wafer cookies
  • pinch of salt
  • 5          graham cracker sheets, broken into bite-size pieces
  • 6          cups Breyers Natural Vanilla Ice Cream, softened
  • 4          large egg whites
  • 1/2       cup sugar
  • birthday candles (optional)
  1. Lightly spray 9-inch springform pan with 3-inch high sides with cooking spray.
  2. In small bowl over simmering water, stir 3 ounces chocolate and oil until melted and blended.
  3. In food processor, grind chocolate wafer cookies into fine crumbs (about 1 1/3 cups). Add chocolate mixture and pinch of salt and pulse until moistened. Press crumb mixture evenly onto bottom and 1 1/2 inches up sides of pan. Freeze for about 10 minutes, or until crust hardens.
  4. In large chilled bowl, fold graham cracker pieces and remaining chocolate into ice cream. Pour mixture into frozen crust and smooth top. Freeze for about 8 hours, or until ice cream hardens. Remove pie from pan and transfer to platter. Return pie to freezer.
  5. In large bowl, using electric hand mixer on medium-high speed, beat egg whites until foamy. Gradually add sugar and beat for about 5 minutes, or until firm glossy peaks form.
  6. Using large spoon, dollop meringue onto pie and spread decoratively, making sure no ice cream is exposed. Using kitchen blowtorch, torch meringue until browned all over.
    Freeze pie for about 30 minutes, or until meringue has stiffened. Decorate with lit birthday candles, if desired. Slice and serve immediately.

Note: Pie, without meringue topping, can be made up to 1 week ahead, covered and frozen.

Brookie Cherry Ice Cream Sandwiches
Prep time: 20 minutes, plus 2 hours 30 minutes freezing time
Cook time: 25 minutes
Serves: 8

  • 1/2       pound fresh cherries, pitted and halved
  • 2          tablespoons granulated sugar
  • 1          tablespoon fresh lemon juice
  • 4          cups Breyers Natural Vanilla Ice Cream, softened
  • 3          cups confectioners’ sugar, sifted
  • 1          cup natural unsweetened cocoa powder, sifted
  • 4          large egg whites, at room temperature
  • pinch of salt
  • 1/2       cup walnut pieces, coarsely chopped
  • nonstick cooking spray
  1. In small saucepan over medium heat, bring cherries, granulated sugar and lemon juice to simmer, mashing cherries with potato masher or fork to break up. Simmer, stirring frequently, for about 15 minutes, or until mixture thickens. Transfer to shallow container, cover and refrigerate until cold.
  2. In large chilled bowl, fold cherry mixture into ice cream until blended. Cover and freeze about 2 hours, or until firm.
  3. Heat oven to 350°F. Line 2 large baking sheets with parchment paper.
  4. Meanwhile, in medium bowl, combine confectioners’ sugar, cocoa powder, egg whites and salt. Using electric hand mixer on low speed, beat for about 1 minute, or until just blended. Fold in walnuts.
  5. Immediately drop 16 mounds of batter onto prepared baking sheets, spacing evenly. Spray underside of spoon with cooking spray and spread mounds into 2 1/2-inch rounds. Bake 10-12 minutes, or until tops are shiny and cracked. Cool cookies completely.
  6. Scoop ice cream onto flat side of half of cookies. Place another cookie on top of ice cream and gently press down until ice cream spreads to edges. Return sandwiches to freezer for about 30 minutes to firm up before serving.

Note: Brookies can be baked up to 1 day ahead, stored airtight at room temperature.

Roasted White Peaches with Honeycomb and Vanilla Ice Cream
Prep time: 10 minutes, plus 20 minutes cooling time
Cook time: 25 minutes
Serves: 8

  • 1          cup sugar, divided
  • 1          lemon, zested
  • 4          ripe but firm white peaches, halved and pitted
  • 2/3       cup water, plus 2 tablespoons, divided
  • nonstick cooking spray
  • 1/3       cup honey
  • 1 1/2    teaspoons baking soda
  • 4          cups Breyers Natural Vanilla Ice Cream, divided
  1. Heat oven to 425°F.
  2. In small bowl, whisk 3 tablespoons sugar and lemon zest for about 1 minute, or until sugar is fragrant and moist. Arrange peaches, cut side up, in 13-by-9-inch baking dish. Pour water into dish. Sprinkle lemon sugar mixture over peaches and roast 25-30 minutes, or until peaches are slightly softened and have released their juices.
  3. Meanwhile, lightly spray cooking spray on small baking sheet.
  4. In medium-heavy saucepan over high heat, bring remaining sugar, honey and 2 tablespoons water to boil, stirring constantly. Reduce heat to medium-high and cook, without stirring, about 5 minutes, or until candy thermometer reaches 305°F.
    Remove from heat and whisk in baking soda until blended and mixture begins to bubble.
  5. Gently pour hot mixture onto prepared baking sheet and cool. Break honeycomb into small pieces and reserve in airtight container.
  6. Spoon 1/2 cup ice cream into each of 8 bowls. Top with warm roasted peaches and warm juices. Sprinkle with honeycomb pieces and serve immediately.

Note: Honeycomb can be stored in airtight container at room temperature for up to 3 days.

Pick Your Cherries and Eat Them Too

How to pick the best cherries and make them last longer

(Family Features) Now that sweet cherry season is officially here, these summertime rubies are a must-have for any barbecue or party, whether they’re baked in a pie, crushed into a cocktail or eaten as a fresh out-of-hand snack. But first things first, what should someone look for when searching for the perfect cherry?

The Perfect Cherries
Cherry enthusiasts should keep an eye out for firm, shiny and smooth skins. In general, the darker the cherry, the sweeter, and with most varieties darkness is a sign of ripeness. The stems should be green and flexible. Northwest cherries, in particular, are known for their extraordinarily sweet flavor, due to the area’s excellent growing conditions. There are a wide variety of sweet cherries, ranging up to the extra-sweet, yellow-fleshed Rainier cherries. Though so similar they’re often sold as their collective “dark sweet cherries,” the most common varieties include Bing, Sweetheart, Chelan, Lapins, Tieton and Skeena.

Keeping Your Cherries Fresh
Fresh cherries should be kept in a tightly sealed bag or container and can keep for approximately two weeks in the fridge. While this cherry season will be short, you don’t have to limit these tasty, healthy treats to just the summer. Buying an extra bag (or two, or three) to freeze allows you to have sweet cherries all year long.

Barefoot Wine Spritzer

Cherry Martini
Servings: 4

  • 2     cups pitted, halved Northwest fresh sweet cherries, divided
  • 1/4  cup almond liqueur
  • 2     teaspoons sugar
  • 12   lady fingers, split in half lengthwise
  • 4     whole Northwest fresh sweet cherries with stems
  • 1/4  cup whipped lowfat cream cheese, divided
  1. Mix halved cherries, liqueur and sugar; marinate 1 hour or longer.
  2. Arrange lady fingers against sides of 4 martini glasses. Before serving, spoon 1/2 cup cherries over lady fingers and swirl 1 tablespoon cream cheese over cherries in each glass. Garnish with whole cherry and serve.

Substitutions: Orange liqueur may be substituted for almond liqueur. Angel food cake or pound cake, cut into 3-by-1-by-1/2-inch strips, may be substituted for lady fingers. Lightly toast strips, if desired. Sour cream or creme fraiche may be substituted for cream cheese.

Cherry Almond Pie
Servings: 8

  • 1/2  cup sliced almonds, divided
  • 1     pastry (9 inches), for double crust pie
  • 1     egg, beaten
  • 4     cups pitted Northwest fresh sweet cherries
  • 1/3  cup sugar
  • 3     tablespoons cornstarch
  • 1     teaspoon ground cinnamon
  • 1/4  teaspoon salt
  • 2     tablespoons red wine

  • Red Wine Glaze
  • 2     cups powdered sugar
  • 1/3  cup red wine
  1. Heat oven to 375°F.
  2. Finely chop 1/4 cup almonds.
  3. Roll dough into circle approximately 16 inches in diameter and sprinkle chopped almonds over top; roll gently to embed nuts in dough.
  4. Transfer dough to lightly greased baking sheet lined with parchment paper, if desired. Brush with beaten egg.
  5. Mix cherries, sugar, cornstarch, cinnamon, salt and wine. Spoon cherry mixture onto dough, leaving 4-inch border. Lift edges of dough over fruit, leaving 5-inch circle of cherries showing in center. Fold in edges of pastry to form circle.
  6. Brush pastry with remaining egg mixture; sprinkle with remaining almonds. Bake 30 minutes, or until pastry browns and filling bubbles.
  7. Let stand 15 minutes before cutting. If desired, serve with Red Wine Glaze to drizzle over each serving.
  8. To make Red Wine Glaze, mix together powdered sugar and red wine.
