  • 4          large eggs
  • dash of salt
  • 2          tablespoons sugar
  • 1/2       cup milk
  • 1⁄2       teaspoon vanilla extract
  • 1          ounce bourbon
  • 8          slices day-old sourdough bread

  4. Place 2 ounces cheese on each slice. Add three slices crispy bacon on top of each cheese portion.
  5. Top with another soaked bread slice. Press filled bread together firmly.
  6. Place baking sheet in oven; bake 15-20 minutes, turning after 8-10 minutes to brown both sides.
  7. Serve immediately with melted butter, maple syrup and powdered sugar.

Hot cooking trends: 5 flavorful ways to prepare pork

3/7/2017

Comments

Picture

(BPT) - Tired of the same old casseroles and pasta dishes? As the seasons transition, you're probably looking for fresh and flavorful ways to prepare satisfying foods for your family and friends.

An increasing number of home and professional chefs are using pork to produce mouth-watering, palate-pleasing recipes. Pork is a satisfying, excellent source of protein that's packed with flavor. What's more, it's budget-friendly and versatile, which allows you to customize pork with your preferred flavors and cooking methods.

Want to know the hottest cooking tips and trends for pork this year? Consider these insights from five-time James Beard Award nominee Chef Jose Mendin. For more meal inspiration, visit PorkTeInspira.com.

Savory main dish, fewer calories

To prepare delicious pork without adding extra calories, use cooking methods like grilling or roasting that don't add fat. Pork loin and ribs are great options for grilling or roasting. Look for lean cuts such as the pork tenderloin in the meat case. Many of these cuts meet USDA's guidelines for "lean," which means they have less than 10 grams of fat per serving.

Customize with spice rubs

Spice rubs are an easy way to customize flavors and infuse them into pork. Herbs and spices with heat are trending, so don't be afraid to enhance your rubs and give them that extra kick.

Embrace Cuban influences

Many of today's hottest cooking trends have Cuban influences. For example, try marinating a pork tenderloin in citrus, garlic and onions - also known as "Cuban-style." Serve on top of rice and beans or place between two pieces of bread and enjoy a sandwich bursting with flavor.

Experiment with the traditional

Pork offers a fantastic base for expanding on the flavors you already know and love. For example, spicy teriyaki is reinvented with a touch of spice for a special meal any day of the week. Try this recipe to see for yourself:

Grilled Ham Steaks with Spicy Teriyaki
by Chef Mendin for PorkTeInspira.com
Serves 4

Ingredients:
2 1-inch thick ham steaks
Spicy Teriyaki Glaze
7 ounces crushed pineapple
6 garlic cloves, minced
1 tablespoon ginger, peeled and minced
1/2 cup soy sauce
1/2 teaspoon sesame oil
1 teaspoon red chili pepper, crushed
1/2 cup brown sugar

Directions:

For Spicy Teriyaki glaze:

In a small pot, combine all ingredients and mix. Heat and bring to simmer to thicken. Remove from heat and set aside to cool.

Heat grill to a medium high heat or 450 F. Place the ham steaks on grill and sear on both sides, approximately 3-4 minutes each side; basting with spicy teriyaki on both sides to achieve a caramel crust. Remove from heat and serve immediately with coconut rice or your favorite rice pilaf. Garnish with pineapple rings.

Go for the garlic

Garlic lovers rejoice! A variety of pork cuts are the perfect pairing to those cloves you adore so much. Add garlic to rubs, marinades, side dishes and more for a flavorful dish even the most discerning chef will enjoy. In fact, try this easy roast recipe to see just how well garlic and mustard mingle with moist pork loin:

Garlic-Mustard Pork Roast
by PorkTeInspira.com
Serves 5-6

Ingredients:

3 to 4 pound boneless pork loin
2 tablespoons garlic, minced
1 tablespoon oregano leaves, crushed
2 teaspoons olive oil
1 teaspoon Dijon mustard
1/2 teaspoon sea salt
1/4 teaspoon coarse grind black pepper

Directions:

Preheat oven to 350 F. Combine garlic, oregano, olive oil, mustard, salt and pepper. Mix until blended into a paste. Using a spatula or hands, rub garlic mixture all over pork loin, massaging into meat. Place pork roast on baking pan and roast uncovered in preheated oven. Roast one hour until internal temperature reaches between 145 F to 160 F using a digital thermometer. Remove from oven. Cover loosely with foil and let stand 10 minutes before slicing. Serve with oven roasted potato wedges.

Thyme-Basted Ham with Roasted Grapes
Prep time: 20 minutes
Cook time: 2-2 1/2 hours
Servings: 15-20 (4 ounces each)

  • 1          cooked, bone-in ham (6-8 pounds), trimmed
  • pepper
  • 1/2       cup grape jelly
  • 4          tablespoons unsalted butter (1/2 stick), cut into 4-6 pieces
  • 2          tablespoons chopped fresh thyme
  • 3          cups whole grapes (red, green or a combination)
  • 4          shallots, halved lengthwise and cut into 1/4-inch slices
  1. Preheat oven to 325° F. Position rack in lower third of oven.
  2. In large shallow roasting pan, place ham flat-side down and score a diamond pattern about 1/8-inch deep into any fat. Season with pepper and bake 1 1/2 hours.
  3. Meanwhile, in small saucepan over medium heat, combine jelly, butter and thyme, whisking occasionally until jelly and butter melt together and mixture comes to gentle boil, 1-2 minutes. Cover and set aside. In medium bowl, combine grapes and shallots. Set aside.
  4. Baste ham with jelly mixture. Continue baking, basting with jelly mixture and/or pan juices about every 15 minutes. When ham’s internal temperature reaches 120° F, add grapes and shallots to roasting pan, stirring to coat with pan juices. Continue baking and basting until internal temperature reaches 140° F, 15-18 minutes per pound. Remove ham from oven, transfer to cutting board and let rest 15-30 minutes. If grapes and shallots aren’t tender yet, return roasting pan to oven.
  5. Slice enough ham to serve and arrange on plates or platter. Season roasted grapes, shallots and pan juice mixture with pepper, and spoon some on top of ham. Serve remaining grape mixture on side.

Stuffed Pork Meatballs with Romesco
Prep time: 20 minutes
Cook time: 25 minutes
Servings: 10 (40 meatballs)

  • 1 1/2    pounds lean ground pork
  • vegetable oil, for the baking sheet
  • 3/4       cup plain dried bread crumbs
  • 1          large egg, beaten
  • 2          tablespoons dry sherry (optional)
  • 2          tablespoons fresh parsley, finely chopped or 2 teaspoons dried parsley
  • 1          teaspoon sweet paprika (preferably smoked paprika)
  • 2          garlic cloves, minced
  • 1/4       teaspoon fresh ground black pepper
  • 40        red-pepper-stuffed green olives (not large)
  • 40        wooden toothpicks or bamboo cocktail spears, for serving

Romesco Sauce:

  • 1          large garlic clove, crushed under knife, peeled
  • 2          drained, jarred roasted red bell peppers
  • 1/4       cup sliced natural almonds
  • 2          teaspoons sherry or red wine vinegar
  • 1          teaspoon sweet paprika (preferably smoked paprika)
  • 1/2       teaspoon dried oregano or 1 teaspoon fresh oregano, chopped
  • 1/4       teaspoon salt
  • 1/3       cup extra-virgin olive oil

To make Romesco Sauce: In food processor, drop garlic through feed tube to mince. Stop machine and add peppers, almonds, vinegar, paprika, oregano and salt. Pulse about 10 times until minced. With processor running, slowly pour oil through feed tube. Transfer to serving bowl. Makes about 1 1/4 cup sauce.

To make meatballs: Preheat oven to 400° F. Lightly oil large rimmed baking sheet. In large bowl, mix bread crumbs, egg, sherry, parsley, paprika, garlic and pepper. Add ground pork and mix thoroughly but gently with hands. Using about 1 tablespoon of meat mixture for each, shape into 40 meatballs. Stuff 1 olive in center of each meatball then completely enclose olive. Arrange meatballs on baking sheet.

Bake meatballs 15 minutes. Turn meatballs over and continue baking until cooked through and browned, about 10 minutes. Transfer meatballs to serving platter. Spear with toothpicks and serve hot with Romesco Sauce for dipping.

Note: Romesco sauce can be covered and refrigerated up to 5 days. Bring to room temperature before serving.
