Actress, chef and mother of two Haylie Duff has a few expert tips and tricks for crafting nutritious meals on a time crunch.

1. Use pre-made ingredients to reduce prep time.

Keeping the fridge stocked with pre-made ingredients is a simple time saver. Adding ingredients such as pre-cut vegetables or hard-cooked peeled eggs to on-the-go snacks or family meals is an easy way to boost the nutrition of a recipe without all of the prep work.

2. Plan a meal-prep day each week

Preparing meals ahead of time to pull from the fridge or freezer and pop into the oven will help save time and reduce stress. Setting aside a couple of hours once a week to plan and prepare meals can make the school week more relaxed. Plus, planning means more time around the table with loved ones during mealtime.

3. Add slow-cooker recipes to your weekly routine

On busier days, let a slow-cooker do all the work. You can make tasty recipes, such as roast chicken with steamed veggies, a quiche or a healthy pasta dish. Simply put the ingredients in the slow cooker and fire it up. In the meantime, you’ll have more time to spend playing with the kids or helping them with homework.

4. Stock up on quality, versatile ingredients

Buffalo Deviled Egg Bites

Ingredients:

6 large eggs

2 tablespoons light mayonnaise

1 tablespoon hot wing sauce (lowest sodium available)

1/8 teaspoon salt

1/8 teaspoon pepper

1 tablespoon finely crumbled low-fat blue cheese

1 tablespoon chopped celery

Directions:

  1. To hard cook the eggs, gently place them in a large saucepan or pot. Add cold water to cover the eggs by 1 and 1/2 inches. Bring the water to a boil over high heat. When the water is boiling, remove the pan from the stove.
  2. Let the pan stand, covered, for 12-15 minutes. Remove the eggs from the pan. Allow them to cool before peeling.
  3. Carefully cut the eggs in half lengthwise. Place the egg halves on a work surface.
  4. Transfer the yolks to a medium bowl. Add the mayonnaise, hot-wing sauce, salt and pepper. Stir until combined. The mixture should be smooth.
  5. Spoon the yolk mixture into a resealable plastic bag. Clip the corner of the bag. Pipe the yolk mixture into the egg white halves.
  6. Sprinkle the blue cheese and celery on top of the filling and enjoy!

Chickpea, Spinach and Coconut Curry

Prep time: 20 minutes
Cook time: 12 minutes
Servings: 6

  • 2          tablespoons olive oil
  • 1          tablespoon ginger, freshly grated
  • 3          cloves garlic, minced
  • 1          large yellow onion, chopped
  • 1          tablespoon turmeric
  • 2          teaspoons kosher salt
  • 1/2       teaspoon crushed red pepper, plus additional, to taste
  • 1          can (29 ounces) chickpeas, drained and rinsed
  • 1          jar (24 ounces) FarmToFork Caramelized Onion & Roasted Garlic Sauce
  • 1          can (15 ounces) light coconut milk
  • 4          cups baby spinach
  • 1/2       cup non-fat plain Greek yogurt, stirred
  • 1/2       cup cilantro, coarsely chopped
  • 2          naan flatbreads, toasted and sliced
  1. In large skillet over medium heat, heat olive oil, ginger, garlic, onions, turmeric, salt and 1/2 teaspoon crushed red pepper. Cook 6-8 minutes, or until onions begin to brown, stirring frequently. Add chickpeas, sauce and coconut milk; cook 3-4 minutes, or until heated through. Add spinach; cover with lid. Simmer 3-4 minutes, or until spinach is wilted. Mix well.
  2. Spoon mixture into six serving bowls and top each with spoonful of yogurt, pinch of cilantro and additional crushed red pepper, to taste. Serve with flatbread slices.

  • 1/3       cup harissa paste, divided
  • 1/3       cup olive oil, divided
  • 1          large red onion, cut into 1/2-inch thick slivers
  • 1          small head cauliflower, cut into small florets
  • 1          jar (24 ounces) FarmToFork Marinara Sauce, divided
  • 1/2       teaspoon ground cumin
  • 3/4       teaspoon kosher salt, divided
  • 3/4       teaspoon ground black pepper, divided
  • 6          bone-in, skin-on chicken thighs (about 2 pounds)
  • 1          pound rainbow carrots, trimmed and peeled
  • 1          lemon, juice only, divided
  • 1/4       cup finely chopped fresh herbs such as dill, mint or cilantro, divided
  • 1 1/2    cups plain Greek yogurt
  1. Heat oven to 425° F. In large bowl, whisk 2 tablespoons harissa and 2 tablespoons oil. Add onions and cauliflower; toss to combine. Spread vegetable mixture in single layer on 17-by-12-inch foil-lined rimmed baking sheet.
  2. In same bowl, whisk remaining harissa, 2 tablespoons oil, 1 cup marinara sauce, cumin, 1/2 teaspoon salt and 1/2 teaspoon pepper. Add chicken; toss with tongs until well coated. Arrange chicken atop vegetables on baking sheet. Bake 50-55 minutes, or until chicken is deep golden brown and internal temperature reaches 165° F.
  3. Use vegetable peeler to create long ribbons of carrots. In bowl, toss carrots with 1 tablespoon lemon juice, 2 tablespoons chopped herbs and remaining oil, salt and pepper. In separate bowl, mix yogurt, remaining lemon juice and remaining herbs.
  4. Serve each chicken thigh with roasted vegetables, dollop of herbed yogurt, carrot mixture and 1/4 cup warmed marinara sauce.

  • 1          pound refrigerated or frozen gnocchi
  • 1/2       cup pecorino Romano cheese, grated
  • 1/4       cup Italian parsley, coarsely chopped
  1. In food processor, pulse onions, carrots, celery and garlic until finely chopped. In large pot over medium-high heat, heat olive oil. Add chopped vegetables, salt and pepper. Cook 10 minutes, or until softened, stirring occasionally.
  2. In food processor, pulse mushrooms until coarsely chopped. Add to large pot with vegetables. Cook 10-12 minutes, or until most liquid is evaporated, stirring occasionally. Stir in marinara sauce and butter.
  3. Cook gnocchi according to package directions; drain. Add to sauce mixture; mix gently. Sprinkle with cheese and parsley.

(BPT) - You know protein is essential to a balanced diet and maintaining energy and many products are now boasting protein content, but do you know what foods are healthful high sources of protein? And do you know how much protein you really need?

How much protein do you need?

With 18 grams of protein per serving, beef is high in protein, easy to prepare and can support a healthy diet. However, only 62% of American beef consumers consider ground beef to be high in protein and just 70% of them consider beef cuts to be high in protein, according to a recent consumer study conducted by Cargill.

The U.S. Department of Agriculture’s (USDA) MyPlate site outlines the amount of protein in various sources. Common portions of beef, such as a small steak or lean hamburger, have more protein than most other options in the food group, like pork, chicken, nuts, seeds, beans and peas.

According to the USDA Dietary Reference, people should be consuming about 0.4 grams of protein per pound of body weight as part of a balanced diet. So, someone who weighs 150 pounds needs 60 grams of protein each day.

Why is it important to achieve a substantial daily consumption of protein? Protein helps repair cells, boosts energy and keeps us satiated longer. It sustains you through a long work day, boosts your stamina for exercise and ensures you don’t get hungry again soon after eating a meal.

People are also increasingly interested in consuming more healthy fats with their protein. Beef is packed with Omega-3 healthy fats that help prevent the risk of heart disease and other chronic diseases. In addition to the nutritional value and protein content, this cost-effective option delivers flavor, convenience and cooking versatility.

How to choose the right beef

Even consumers who regularly buy beef struggle with selecting the best cuts for their purpose, and many of them lack an understanding of how to use the USDA grading system as a guide when purchasing beef.

At the grocery store, consumers should look for the USDA grades on packaging. Choosing USDA Select grade beef offers a leaner protein source with slight amounts of fat and marbling. For a high-quality cut of meat for a special occasion, a Prime cut of beef offers abundant marbling and flavor, but it is not considered lean. The Choice grade of beef offers moderate marbling and flavor and is a little less lean than Select cuts.

When choosing ground beef, each cut is an excellent source or protein and is similar in flavor and tenderness, but varies in fat content:

  • Ground beef — 73% lean, 27% fat
  • Ground chuck — 80% lean, 20% fat
  • Ground sirloin — 85% lean, 15% fat
  • Ground round — 90% lean, 10% fat

Among the five food groups, protein provides consumers with nutritional benefits and the affordability of beef makes it a clear-cut selection as part of a balanced diet.

Peanut oil is a vegetable oil derived from the seeds of the peanut plant. Peanut oil creates a diverse range of flavors based on how it is processed. Its ambiguity has made it useful for frying, sautéing, and adding flavor to foods, primarily Asian-based cuisine.

Peanut oil encompasses quite a few benefits. This oil has large amounts of beneficial unsaturated fats, as well as antioxidant, vitamin E, and phytosterols. These nutrients promote heart health, low cholesterol, and improved triglyceride levels.


Black Seed Oil
Black seed oil has many benefits; one of which is adding flavor to some favorite types of food. It is processed using black cumin seeds from the black cumin plant. Black cumin seeds are popular for how aromatic they are alongside the bold flavor that they create. These qualities are equally prominent in black seed oil, which can be used in salads, beverages, and dishes in need of spicing like curry.

Black seed oil contains three very powerful natural chemicals: thymoquinone (TQ), thymohydroquinone (THQ), and thymol. TQ is an antioxidant with properties that discourage inflammation and cancer. THQ inhibit enzyme activity, treating conditions such as Alzheimer’s, Parkinson’s disease, and dementia. Thymol is a chemical that works as a pesticide, disinfectant, and virucide. All these chemicals come together in black seed oil, making it an especially powerful nutrient in foods.


Extra Virgin Olive Oil
Extra virgin olive oil is an oil derived from olives. Because it has not been processed with heat or chemicals, it retains its beneficial nutrients and flavors. Its taste is diverse, making it popular in salad dressings, sautéed dishes, and soups.

The antioxidants and healthy fats that extra virgin olive oil contain make it a very healthy oil, contributing to longer and healthier lifespans in the areas where it is prominent in the diets of locals. This is the result of the oil having high amounts of monounsaturated fats which promote heart health while also reducing inflammation, cholesterol, and blood pressure.

Hummus Toast with Sun-dried Tomatoes and Parmesan

Servings: 1

  • 1          slice whole-grain bread
  • 1/4       cup fresh arugula
  • 2-3       sun-dried tomatoes
  • 2          tablespoons Sabra Classic Hummus
  • olive oil
  • 2          tablespoons pine nuts
  • fresh Parmesan curls
  • salt, to taste
  • pepper, to taste
  1. Toast bread; set aside. Wash and pat dry arugula; set aside.
  2. Remove sun-dried tomatoes from jar and lightly pat with paper towel to remove excess oil.
  3. Spread toast with hummus.
  4. Lightly toss arugula with drizzle of olive oil; layer on top of hummus. Top with sun-dried tomatoes. Sprinkle with pine nuts and add Parmesan curls. Add salt and pepper, to taste.

Hummus Toast with Soft-Boiled Egg and Spinach

Servings: 1

  • 1          slice artisan country white bread
  • 1/4       cup fresh spinach, wilted
  • water
  • 1          soft-boiled egg
  • ice
  • 1          garlic clove, chopped
  • 1          teaspoon olive oil
  • 2          tablespoons Sabra Classic Hummus
  • red pepper flakes, for garnish
  • salt, to taste
  • pepper, to taste
  1. Toast bread; set aside. Wash spinach; set aside.
  2. Fill small saucepan with enough water to barely cover egg; bring to boil, cover and reduce heat. Cook egg 6 minutes, remove from heat and plunge into ice bath to stop cooking. Peel egg; set aside.
  3. In medium skillet, saute chopped garlic in olive oil approximately 3 minutes; add spinach and stir 2 minutes, or until spinach begins to wilt. Remove from heat.
  4. Spread toast with hummus. Add wilted garlic-spinach. Cut egg in half and place on top of spinach. Sprinkle with red pepper flakes, salt and pepper.
