Java London Broil

  • 2          teaspoons freshly ground coffee
  • 1/2       tablespoon Truvia Brown Sugar Blend
  • 2          teaspoons freshly ground black pepper
  • 1          teaspoon ground coriander
  • 1/2       teaspoon dried oregano
  • 1/4       teaspoon sea salt
  • 1          London broil (1 1/2 pounds, preferably grass fed)
  • 1          teaspoon extra-virgin olive oil
  1. Heat grill to high.
  2. In small bowl, add coffee, brown sugar blend, black pepper, coriander, oregano and salt; mix well.
  3. Place London broil on cutting board or large plate. Drizzle 1/2 teaspoon of olive oil on each side of meat then rub all over. Sprinkle seasoning mixture over roast and rub in to evenly cover meat.
  4. Grill London broil to desired doneness, about 3-5 minutes per side for medium rare. Tent meat with foil for 5 minutes then slice into thin slices, cutting at an angle against the grain.

Quick Berry Crumbles a la Mode

Servings: 6

  • 6          cups fresh mixed berries
  • 1 1/2    tablespoons plus 1/2 tablespoon Truvia Natural Sweetener, divided
  • 2          tablespoons plus 2 tablespoons whole-grain oat flour, divided
  • 1/3       cup stevia-sweetened natural vanilla protein powder (about 30 grams)
  • 1/2       teaspoon ground cinnamon
  • 1 1/2    tablespoons vegan butter
  • 1 1/2    cups high-protein, low-calorie, stevia-sweetened vanilla ice cream
  1. Heat oven to 400° F.
  2. In medium mixing bowl, stir together berries, 1 1/2 tablespoons natural sweetener and 2 tablespoons flour until well combined. Spoon mixed berries evenly (about 3/4 cup in each) among six ramekins (4 1/2 inches in diameter; 1-1 1/2 cups capacity). Place ramekins on baking sheet large enough to hold them in single layer so they sit flat.
  3. Add remaining flour, protein powder, remaining natural sweetener, cinnamon and vegan butter to small mixing bowl. Using fork or pastry blender, stir flour mixture together to create crumble. Divide crumble evenly over top of fruit in ramekins (about 1 1/2 tablespoons per ramekin).
  4. Bake until crumble is golden on top and berries are hot throughout, about 14-20 minutes. Let crumbles cool 3 minutes. Top each with 1/4 cup ice cream for serving.
  5. Cover any remaining crumbles with plastic wrap and store in refrigerator up to 3 days. Reheat in oven then top with ice cream just before serving.

Cherry Lavender Spritzer

Servings: 6

  • 4          cups pitted and halved Northwest sweet cherries
  • 2          cups water
  • 3          tablespoons lavender
  • 2          tablespoons sugar
  • 6          Northwest sweet cherries with stems
  • 6          sprigs lavender blossoms
  1. In small saucepan, combine cherries, water, lavender and sugar. Heat mixture until it begins to boil. Remove from heat and allow mixture to cool completely. Strain and reserve liquid. 
  2. For each drink, combine 4 ounces cherry-lavender mixture and 4 ounces crushed ice in tall 12-ounce cocktail glass; top each with club soda. Garnish each drink with one cherry with stem and one sprig lavender blossoms.

Variation: To make alcoholic version, shake or stir strained cherry-lavender mixture and ice with 9 ounces vodka. Strain into 8-ounce martini glasses, top each with club soda and garnish each with one cherry with stem and one sprig lavender blossoms.

Roasted Cherry Sauce

Makes: 1 cup

  • 2          cups pitted Northwest sweet cherries
  • 2/3       cup sugar
  • 2          teaspoons cornstarch
  • 1/8       teaspoon salt
  • 1/8       teaspoon black pepper
  1. Heat oven to 400° F. On foil-lined baking sheet, combine cherries, sugar, cornstarch, salt and black pepper; toss to mix.
  2. Place in oven and roast until cherries start to release juices and become soft, about 10 minutes. Cool before serving.

Strawberry Peanut Butter Pie

  • 1 1/4    cups crushed pretzels
  • 1/4       cup granulated sugar
  • 1/2       cup butter, melted
  • 1          cup creamy peanut butter
  • 1          package (8 ounces) cream cheese
  • 1/2       cup powdered sugar
  • 1 1/2    cups frozen whipped dessert topping, thawed
  • 1          can (21 ounces) Lucky Leaf Premium Strawberry Fruit Filling and Topping
  1. Combine pretzels and granulated sugar then stir in butter. Press crumb mixture onto bottom and sides of 10-inch pie plate. Cover and chill.
  2. With electric mixer on medium speed, beat together peanut butter, cream cheese and powdered sugar. Fold in whipped dessert topping.
  3. Spoon 1/2 cup pie filling into crust-lined pie plate. Carefully spread peanut butter filling over top. Top with remaining pie filling. Cover and chill 2 hours before serving.

Fluffy Blueberry Cream Pie with Toasted Coconut

  • 1          package (8 ounces) cream cheese, softened
  • 1/3       cup sugar
  • 1          tablespoon milk
  • 2          cups frozen whipped topping, thawed

  • 1/2       cup toasted coconut flakes, plus additional for topping, if desired
  • 1          graham cracker crust (9 inches)
  1. In large bowl, beat together cream cheese, sugar and milk until creamy, about 1-2 minutes. Add whipped topping, pie filling and coconut; carefully fold together until no streaks remain.
  2. Spoon filling mixture into graham cracker crust. Sprinkle top with additional coconut flakes, if desired. Cover and chill 2 hours, or until firm.

"You don't have to get up early to impress guests with a holiday breakfast," said Chef Kevan Vetter of the McCormick Kitchens. "Take waffles, simply add green food color to the batter then dust with powdered sugar 'snow' to resemble Christmas trees. Or prepare a cinnamon roll casserole the night before. Soak cut-up challah bread in milk and cinnamon overnight, bake until golden in the morning. Finish off with a drizzle of cream cheese frosting."

Overnight Cinnamon Roll Casserole
Prep time: 10 minutes
Cook time: 25 minutes
Servings: 12

  • 12 eggs
  • 1 1/2 cups plus 3 tablespoons milk, divided
  • 2 tablespoons McCormick Ground Cinnamon, divided
  • 5 teaspoons McCormick Pure Vanilla Extract, divided
  • 1/4 teaspoon baking powder
  • 1 loaf challah or brioche bread, cubed
  • 1/4 cup butter, melted
  • 1/4 cup firmly packed brown sugar
  • 1/2 cup whipped cream cheese
  • 3 tablespoons confectioners' sugar
  1. Mix eggs, 1 1/2 cups of milk, 1 tablespoon of cinnamon, 3 teaspoons of vanilla and baking powder in large bowl with wire whisk until well blended. Add bread cubes; toss to coat well. Pour into 13x9-inch baking dish sprayed with no stick cooking spray. Cover. Refrigerate at least 4 hours or overnight.
  2. Preheat oven to 350°F. Remove casserole from refrigerator. Mix melted butter, brown sugar and remaining 1 tablespoon cinnamon in small bowl until well blended. Drizzle over casserole. Let stand 10 to 15 minutes.
  3. Bake 20 to 25 minutes or until golden brown. Let stand 5 minutes before serving.
  4. Meanwhile, mix cream cheese, confectioners' sugar and remaining 2 teaspoons vanilla in small bowl until smooth. Slowly stir in remaining 3 tablespoons milk. Drizzle over casserole before serving.

Christmas Tree Waffles
Prep time: 5 minutes
Cook time: 20 minutes
Servings: 4

  • 2 cups waffle mix
  • 1 1/3 cups milk
  • 1 egg
  • 2 tablespoons vegetable oil
  • 2 teaspoons McCormick Pure Vanilla Extract
  • 15 drops McCormick Green Food Color
  • confectioners' sugar
  • mini candy-coated chocolate pieces
  1. Preheat round waffle iron. Spray with no stick cooking spray. Mix waffle mix, milk, egg, vegetable oil, vanilla and food coloring until blended.
  2. Pour about 1/3 cup of batter onto center of hot waffle iron. Close lid. Cook about 5 minutes or until no longer steaming. Carefully remove waffle. Repeat with remaining batter.
  3. Break each waffle into 4 triangles. Layer 3 triangles on a serving plate to resemble a Christmas tree. Sprinkle with confectioners' sugar. Use candy-coated pieces to decorate tree as ornaments.

  • 1          jar (23.5 ounces) Dole Pineapple Chunks
  • 2          tablespoons Greek yogurt
  • 2          vanilla wafers, crushed
  1. Measure 1/2 cup drained fruit.
  2. Spoon pineapple chunks into dessert glass. Spoon yogurt over pineapple. Sprinkle crushed wafers on top.

Tropical Rum Raisin Dessert
Total time: 30 minutes
Servings: 4

  • 1          jar (23.5 ounces) Dole Tropical Fruit, drained, juice reserved
  • 1/2       cup Dole Seedless Raisins
  • 1/4       cup spiced or coconut rum
  • 2          cups vanilla ice cream or frozen yogurt, divided
  • 4          teaspoons toasted shredded coconut, divided
  1. Place fruit in medium bowl and set aside. In small bowl, combine raisins, rum and 1/4 cup reserved juice. Allow raisins to soak at least 20 minutes until plump. Drain off liquid.
  2. Combine fruit and rum raisins; spoon into serving bowls. Top each bowl with 1/2 cup scoop of ice cream and top each with 1 teaspoon toasted coconut.

Tip: 1/2 teaspoon rum extract and 1/2 cup reserved juice may be used instead of rum.

Asian Chicken Lettuce Wraps
Total time: 15 minutes
Servings: 1

  • 1/2       cup refrigerated cooked chicken breast strips
  • 2          Bibb or Boston lettuce leaves
  • 1/2       cup Dole Mandarin Oranges, drained
  • 2          teaspoons slivered almonds
  • 1          tablespoon light Asian salad dressing
  1. Divide chicken equally inside two lettuce leaves, making two wraps.
  2. Add 1/4 cup of Dole Mandarin Oranges and 1 teaspoon slivered almonds into each wrap.
  3. Serve lettuce wraps with light Asian salad dressing for dipping.

Orange Chipotle Avocado Toast
Total time: 10 minutes
Servings: 1

  • 1          slice whole wheat bread
  • 1/2       avocado, diced or smashed
  • salt
  • pepper
  • 1/3       cup Dole Mandarin Oranges, drained
  • 1/2       teaspoon chipotle peppers in adobo sauce, finely chopped
  • 1/4       lime
  1. Lightly toast whole-wheat bread and top with diced avocado. Season with salt and pepper, to taste.
  2. In medium bowl, toss oranges with chipotle peppers.
  3. Spoon oranges over avocado toast and finish with a squeeze of lime.

Tip: For spicier toast, include pepper seeds. For more mild heat, remove seeds. A sprinkle of chili pepper can also be used to add spice.

(Family Features) This Fourth of July, take your backyard barbecue staples from basic to bold with knock-out burgers, grilled fruit “steaks” and festive red, white and blue-colored desserts.

Opt for burgers with a brazen rub that creates a caramelized outer layer. Make the meal an epic Fourth of July feast with a side of grilled watermelon steaks, marinated in white balsamic vinegar, lemon juice and rosemary, and topped with walnuts, lemon zest and fresh parsley.

“Burgers are an Independence Day mainstay, but that doesn’t mean they have to be boring,” said McCormick Executive Chef Kevan Vetter. “Pick a flavor combo that packs a real punch for the rub, then build out the burger with toppings and condiments to match that taste. For example, use Smoky Montreal Steak Seasoning, chili powder and brown sugar to make a sweet and smoky rub, then top with a rich BBQ mayonnaise, melty cheddar, grilled pickle slices and crispy onion straws.”

Cowboy Burger with Grilled Pickles and Crispy Onion Straws

Ingredients

BBQ Mayonnaise
  • 1/4 cup mayonnaise
  • 2 tablespoons Stubbs Original Bar-B-Q Sauce
Crispy Onion Straws
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon McCormick Ground Black Pepper
  • 1 medium onion, very thinly sliced and separated into rings
  • vegetable oil, for frying
Cowboy Burgers
  • 4 teaspoons McCormick Grill Mates Smoky Montreal Steak Seasoning
  • 1 tablespoon McCormick Chili Powder
  • 1 tablespoon packed brown sugar
  • 1 1/4 pounds ground beef
  • 4 slices mild Cheddar cheese
  • 1 dill pickle, sliced lengthwise 1/4-inch thick
  • 4 Kaiser rolls
  • 4 lettuce leaves

Preparation

  1. For the BBQ Mayonnaise, mix mayonnaise and Bar-B-Q Sauce in small bowl until well blended. Cover. Refrigerate until ready to serve.
  2. For the Onions, mix flour, salt and pepper in large resealable plastic bag. Add onion; toss to coat well. Pour oil into deep fryer, large heavy skillet or saucepan, filling no more than 1/3 full. Heat oil on medium-high heat. Carefully add onion rings to hot oil. Fry 4 to 5 minutes, turning once to brown evenly, until onions rings are golden brown. Drain on paper towels. Set aside.
  3. For the Burgers, mix Seasoning, chili powder and brown sugar in small bowl. Shape ground beef into 4 patties. Coat surface of each patty evenly with the rub mixture. Grill over medium heat 4 to 6 minutes per side or until burgers are cooked through (internal temperature of 160°F). Add cheese slices to burgers 1 minute before cooking is completed. Grill pickle slices 2 to 3 minutes per side or until grill marks appear. Toast rolls on the grill, open-side down, about 30 seconds, if desired.
  4. Serve burgers on rolls topped with grilled pickles, Crispy Onion Straws and lettuce. Serve with BBQ Mayonnaise.

Grilled Watermelon Steaks with Walnut Gremolata

Ingredients

  • 1/2 small seedless watermelon
  • 1/2 cup white balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon McCormick Gourmet Crushed Rosemary
  • 1/2 teaspoon Sea Salt from McCormick Sea Salt Grinder
  • 1/2 teaspoon McCormick Coarse Ground Black Pepper
  • 1/4 cup finely chopped toasted walnuts
  • 1/4 cup finely chopped parsley
  • 1 teaspoon grated lemon peel

Preparation

  1. Cut 4 (1-inch thick) half-moon slices of watermelon. Reserve any remaining watermelon for another use.
  2. Mix vinegar, oil, lemon juice, rosemary, salt and pepper in small bowl. Reserve 2 tablespoons for drizzling grilled watermelon.
  3. Place watermelon steaks in glass dish. Add remaining marinade. Refrigerate 20 minutes, turning watermelon halfway through marinating time.
  4. Meanwhile, for the Walnut Gremolata, mix walnuts, parsley and lemon peel in small bowl. Set aside. Remove watermelon steaks from marinade. Reserve leftover marinade for brushing watermelon during grilling.
  5. Grill watermelon steaks over high heat 2 to 4 minutes per side or until grill marks appear, brushing with leftover marinade.
  6. To serve, cut watermelon steaks in half. Drizzle with reserved 2 tablespoons marinade. Sprinkle with Walnut Gremolata.

Red, White and Blue Mousse Parfaits

Ingredients

  • 3 1/2 cups heavy cream, divided
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup plus 2 tablespoons sugar, divided
  • 2 teaspoons McCormick Extra Rich Pure Vanilla Extract
  • 2 teaspoons McCormick Red Food Color
  • 1 teaspoon McCormick Pure Lemon Extract
  • McCormick Assorted NEON! Food Colors & Egg Dye
  • 2 tablespoons white chocolate chips

Preparation

  1. Beat 1 1/2 cups of the heavy cream, cocoa powder, 2 tablespoons of the sugar and vanilla in large bowl with electric mixer on medium speed until stiff peaks form. Add red food color; stir gently with spatula until evenly tinted.
  2. Beat remaining 2 cups heavy cream, remaining 1/2 cup sugar and lemon extract in large bowl with electric mixer on high speed until stiff peaks form. Remove 1 cup. Add 3/4 teaspoon neon blue and 5 drops neon purple food colors; stir gently with spatula until evenly tinted.
  3. To assemble parfait, alternately layer red and white mousses in dessert glasses. Top with blue mousse and white chocolate chips. Refrigerate until ready to serve.
